
A Mouliné in Presentation.
On July 27th 2025 I hosted Sunday Cafe at Stoffa’s Flagship. What mattered the most was the beauty we created. What was woven at the heart of this event, made it so special to be a part —from the commitment to natural and raw materials to the presentation, between Stòffa and Muted Entity alike.
Stòffa is a slow fashion brand with a focus on made to order menswear garments. Much of what they make is naturally-dyed and woven from raw materials like “cotton to merino wool, cashmere to silk and camel hair” all made in Italy. I want to tell you about their mouliné sweaters. The term "mouliné" refers to a fabric made with yarn, exhibiting a unique blended appearance. Stòffa commits to a recreation line of cotton mouliné sweaters, creating new threads of yarn by shredding and spinning leftover garments from past collections. This collection reflects their craft, history, and commitment to minimizing waste.

Slowness — Peace of Mind.
What makes Muted Entity special is our commitment to slow experiences and craft. We work at a slow pace to preserve energy and create a peaceful environment for the barista, and guest. I believe energy is contagious, and we commit to grounding ourselves to be a vessel that communicates this internal ‘Muted’ language. Slow production means taking the time ahead to begin planning. Much of my work happens behind closed doors. Weeks before the actual event; researching and developing extraction methods, holding service rehearsals, curing concrete models for our bar installation, making ice, and refining recipes. So that when it’s time for service everything feels easy. This commitment to slowness and peace also informs the meticulous craft of our coffee.


Crafting & Feedback
Earlier this month at Stòffa, I decided to create a cold brew using a natural processed Gesha By Finca Zara from Huila, Colombia. It was originally for pour over / flash brew. However, when it was prepared as a cold brew it blew me away, mimicking the desired notes without contemplation.
Questioning our methods about cold brew, someone commented on the cafe tradition of using old beans to make cold brew and how they dislike the drink.
Committed to a roast-to-order buying method from Saija, beans are ordered specifically for how they will be best enjoyed and at a low quantity to minimize waste. Cold brew is not a last resort to salvage coffee; I treat it as a priority. Through a detailed process I craft the cold brew. By cupping and intuition… allowing the coffee to speak during this phase, listening to hear if it wants to be served as a cold brew or poured over. In addition, lots of time is spent sampling small batches of cold brew with different variables like water type or extraction, taking the time to meticulously prepare the cold brew before batching for service. In the coffee industry, it’s not a thing. I am not supposed to “waste Gesha on cold brew.” But my love for experimentation and coffee led me in a different direction.
I urged the person who commented to taste the cold brew. Their response? Full of great joy! They tasted the differences between mine and the industry standard cold brew they grew to no longer enjoy.
The Commitment to Alignment
Many asked, “How do you choose what brands to work with?” I think it's a vital question to ask. I am appreciative and curious, that's what drives my decision making. I am actively shaping the image of Muted Entity and building the brand to be known for craft, design, coffee, and service. Appreciating intentional and authentic energy, I seek out brands and artists who value these things. I am always curious about how Muted Entity can contribute to something of value.
Curated Service
We design each coffee service to reflect and blend into the ‘Entity’ that we are visiting. At Stòffa our curated service embodied the core of the brand; thoughtfulness, conscious production, and presentation. I always think about what story I want to tell, who aids in painting that picture and what it takes to serve the community. I am driven by intuition and function not capital gain and commercial pressures. It is about purpose not status. The vibe has to be right, and Stòffa's was perfect.




I am proud to take an unconventional route in terms of activations and events like managing a slow bar in an espresso machine dominated industry: our intentional bar installations and tablescapes are full of hand crafted items that take lots of energy to transport and set up. By hand grinding each dose of coffee for personalized service, we focus on serving a curated menu in the simplest form. We believe each detail is important — Our ice, we mineralize and hand count each cylinder as we place it into the cup, to cool the beverage, allow it to melt delectably into the drink. We executed in complex layers but displayed it in a beautifully simple manner. Stòffa also embodies a similar spirit. It takes questions and observation to notice the layers they put into everything they do.

We source our coffee from Saija a micro roaster that embodies the philosophy "sourcing & roasting beautiful coffees and honoring the value behind them". It’s an honor to work with an integral roaster who values align so well. Committed to ethical sourcing, and eco friendly packaging. Saija puts great effort into their operations and the information they make accessible.




A Journey Blinded By Gratitude
During my journey of reshaping what coffee can be and the brand of Muted Entity, moments like Stòffa’s Sunday Cafe services are experiences that motivate me. I can see that it is possible to build a business that rejects the mainstream. With the rise of synthetic materials and fast fashion, Stoffa has a strong reverence for raw and natural materials. As I scroll through their website I find things like this on their website “Producing clothing only on demand is fundamental in our commitment to personal service and responsible production. It removes the guessing game from production, allowing us to offer you a broader range of sizes and materials, while avoiding unnecessary waste and environmental costs. It’s better for you, and better for the world.” I am inspired to build something as profound for Muted Entity. There's no blueprint for this in the coffee industry but I’m excited to try. I have a long way to go in terms of creating what feels right for Muted Entity. However, I won’t back down. If you believe in the “small steps”, let's continue this journey together. One small step we all can be proud of is during our time at Stòffa we partnered with Alf Bakery and offered all the proceeds to World Central Kitchen, creating a memorable and meaningful Sunday!
